In a large, heavy skillet, heat oil, add onion and cook 3 minutes, then add garlic and cook another 3 minutes. Add squash and cook, turning every 5 minutes, for 15 minutes. Type O and AB add tomatoes, reduce heat, and continue to cook another 10 minutes. Season with salt, toss with fresh basil, and top with grated cheese, if desired. Serve with rice or pasta as a main course, or with grilled meats, chicken, or fish. Serves 6.

BRAISED COLLARDS

Collard greens were traditionally cooked for hours with a piece of fatback bacon. For our purposes, however, a little olive oil replaces the bacon fat. Collard greens are not only delicious and nutritious, but Highly Beneficial for all of the blood types. Collards also are great as cold leftovers. You can use them as a filling for a frittata or an omelette. For Type O, Type B, or Type AB, there is no better way to fuel the body for a day’s excursions than an omelet or frittata with leftover collards.

3 tablespoons olive oil

1 large onion, thinly sliced

1 large bunch fresh collard greens, washed well, tips of stems

removed (the stems are quite delicious)

2 tablespoons soy sauce or tamari sauce (optional)

small amount of water, as needed
